Zucchini Cake
The recipe goes as follows:
1 ¾ cups sugar
2 cups shredded zucchini
½ cup margarine
2 ½ cups flour
½ cup oil
4 tbsp cocoa
2 eggs
1 tsp baking soda
1 tsp vanilla
½ tsp cinnamon
½ cup sour cream
½ tsp salt
Mix together margerine, sugar and oil. Add eggs, vanilla, sour cream and stir in. Add dry ingredients. Stir in zucchini and pour into a 9×13″ pan. Sprinkle top with ½ cup chocolate chips. Bake at 325° for 40-50 minutes.
